Ingredients

  • 4 eggs
  • 1/4 cup minced onion
  • 3-4 minced green chillies
  • salt
  • red chilli powder
  • oil for cooking
  • chopped cilantro for garnish (optional)

Instructions

  1. Heat a lug of oil in a saucepan

  2. Briskly whisk the eggs, a little chilli powder and a fat pinch of salt together

  3. When the oil shimmers (gets hot) add your onions and green chillies and saute until the onion looks translucent

  4. Add your eggs and cook, breaking and folding in on over itself till required doneness

  5. Eat hot with toast
