Triple Chocolate Cream Cheese Cookies

  • 8 tbsp butter (1 stick)
  • 2 oz cream cheese at room temp
  • ¾ cup packed light brown sugar
  • ¼ cup granulated sugar
  • 1 egg
  • 1 tsp instant coffee
  • 1 tsp vanilla extract
  • ½ cup cocoa powder
  • 1 ¾ cup flour
  • 2 tsp cornstarch
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ cup semi sweet or dark chocolate chips
  • ½ cup white chocolate chips


  1. Cream together the sugars, butter, cream cheese, egg, vanilla, coffee, and salt on medium to high speed until fluffy. 3-4 minutes. 

  2. Beat in the cocoa powder till combined.

  3. Mix in the flour, cornstarch and baking soda until just combined then stir in the chocolate chips. 

  4. Chill the dough for a few hours because it improves the flavor and stops the cookie from spread into abstract art shapes.

  5. Preheat oven to 350 and using two spoons or a cookie scoop form your cookies onto a parchment lined cookie sheet. Leave an inch or so between cookies

  6. Bake for 8 minutes, the edges will be set, the centres less so, that's just fine.

  7. Cool on a wire rack and enjoy.
